Lemon Balm - מְּלִיסָה

Lemon balm is a perennial plant native to Southern Europe, the Mediterranean, and Western Asia. It grows in bushy clumps (1–3 feet tall) with rounded toothed leaves, and a strong lemony scent when crushed. In the summer, it produces small white flowers that attract pollinators. Lemon balm can be considered invasive as it is prone to spreading by dropping seeds after flowering.

Lemon balm is best harvested just before flowering in the summer when essential oil content is highest. Lemon balm leaves add a fresh, lemony flavor to teas, salads, desserts, and drinks, and can also be used in marinades, sauces, or as a garnish.
