Purslane is a low-growing, succulent plant with smooth stems, thick green leaves and small yellow flowers. Originally from the Mediterranean, today it is often considered a weed, but it’s actually an edible plant high in omega 3s.
Purslane leaves are crunchy, with a mild lemon flavor, and is often eaten raw in salads. It can also be cooked by sautéing it like spinach or by adding it to soups.
