Tomatillos are a perennial but typically grown as an annual plant native to Mexico and Central America. The plant produces yellow flowers with dark spots in the center that then form a small, round green berry enclosed in a papery husk.
The name “tomatillo” comes from Spanish, meaning “little tomato”. While they are related, the presence of the tomatillo husk as well as their different flavor profile and texture set them apart.
The tart, citrusy flavor of tomatillos makes them a staple in many Mexican and Central American dishes. Most notably in salsa verde where the fruit is roasted or boiled then blended. They can also be eaten raw (after removing the husk) or cooked in sauces, stews, salads, and preserves.
